History of Fried Rice

Fried rice has a long and luscious history, with records dating back to China's Sui Dynasty (589-618 CE). Although, evidences of stir-frying were found much earlier, it was not till the late Ming Dynasty (1368–1644 CE) that this cooking technique gained popularity.

It is said that fried rice started as a way of using up leftovers as in Southern China, people mainly ate plain rice with their meals. However, any leftover items like rice, meat, and vegetables from the previous day would be stir-fried with lard, soy sauce, garlic and other spices to make it a new, delicious meal.

The basic ingredients of Chinese fried rice had rice, meat, vegetables, soy sauce, and garlic. With time, different recipes like Yangzhou and Sichuan fried rice started appearing, and the Cantonese often turned leftover rice into fried rice with chopped meat and vegetables. The method of making fried rice using a Chinese wok spread from Southern China to other rice-growing areas in East and Southeast Asia.
