Chocolate soufflé has a rich and captivating history, where it is said that soufflés were first made in France during the 18th century. 

The name “soufflé” originated from the French verb “souffler” that translates to “to blow” or “to puff”. This described the signature light, fluffy and airy consistency of the dish perfectly. 

Soufflé references first appeared during the late 17th century, when French gastronomy saw rapid progress. One of the earliest known recipes of soufflés was published in a cookbook of 1742 called “Cuisinier Moderne” by Vincent La Chapelle.

Soufflés became widely popular and firmly part of French cuisine in the 19th century.

Chocolate soufflés made their debut in society during the 19th century, when chocolate became more accessible to the public.

The renowned French chef Marie-Antoine Carême is said to be the one who introduced the first ever recipe of chocolate soufflé, which made the dish gain rapid popularity.

Although, soufflés were originally meant to be savory, sweet soufflés became a favorite in no time and despite their variations, the chocolate soufflé remains a timeless favorite, cherished for its luxurious taste and delicate structure.

An Easy Chocolate Soufflé Recipe

Ingredients

  • Unsalted butter – 2 tablespoons (for greasing ramekins)
  • Granulated sugar – 2 tablespoons (for dusting ramekins)
  • Dark chocolate – 120g (about 4 oz), chopped
  • Unsalted butter – 3 tablespoons (for the batter)
  • Egg yolks – 2
  • Egg whites – 3
  • Granulated sugar – 3 tablespoons (for the batter)
  • Vanilla extract – ½ teaspoon (optional)
  • Pinch of salt

Instructions

  • Preheat your oven to 375 °F (190.56 °C).
  • Grease the insides of 4 small ramekins with butter. Sprinkle sugar inside, turning to coat evenly. Set aside.
  • Melt the chocolate and butter (3 tablespoons) together in a heatproof bowl over a pot of simmering water (double boiler) or in the microwave in 15-second intervals. Stir until smooth. Set aside to cool slightly.
  • Whisk the egg yolks into the melted chocolate until well combined. Add vanilla extract if using.
  • In a clean bowl, whisk egg whites and salt until soft peaks form. Gradually add 3 tablespoons of sugar, one spoon at a time, while whisking until stiff, glossy peaks form.
  • Gently fold the egg whites into the chocolate mixture in three batches. Use a spatula and a light hand to retain as much air as possible.
  • Divide the mixture evenly among the prepared ramekins.
  • Place ramekins on a baking sheet and bake for 12–15 minutes until the soufflés have risen, and the tops are set.
  • Serve immediately with a dusting of powdered sugar, whipped cream, or a scoop of ice cream.
