Pizza Through The Ages
People in ancient Rome, Egypt, and Greece consumed flat breads with different toppings that resemble modern focaccia more than today's pizza. But, the origins of pizza goes back to these early flat breads.
As we know, the pizza we eat today has its origin in Naples, Italy during the 18th and 19th centuries. In a city that was so densely populated, working class and poor people were in the lookout for inexpensive and quick food that slowly led to the invention of pizza.
These flat breads were topped with cheese, garlic, tomatoes, and oil that created a cheap and convenient meal.
When King Umberto I and Queen Margherita of Savoy visited Naples in 1889, they sampled an assortment of pizzas from Pizzeria Brandi. The pizzas left them so impressed that the popularity of pizza skyrocketed throughout Italy.
The Queen's favorite, topped with mozzarella, tomato, and basil, was named Pizza Margherita in her honor.

- 1 cup (0.24 l) pizza sauce (store-bought or homemade)
- 1 ½ cups shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon dried oregano (optional)
- 1 teaspoon dried basil (optional)
- Salt and pepper to taste
Instructions:
- Preheat Oven: Preheat your oven to 475 °F (ca. 246 °C). If you're using a pizza stone, place it in the oven while it heats.
- Prepare Dough: If using pre-made dough, follow the package instructions. Roll out the dough on a floured surface to your desired thickness. Transfer it to a pizza pan or baking sheet lightly coated with olive oil.
- Add Sauce: Spread a thin layer of pizza sauce evenly over the dough, leaving a small border around the edges for the crust.
- Add Cheese: Sprinkle the shredded mozzarella cheese evenly over the sauce. If you like, add dried oregano and basil for extra flavor.
- Bake: Drizzle a little olive oil over the top of the pizza. Bake in the preheated oven for 12–15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
- Cool and Slice: Let the pizza cool for a few minutes before slicing. Enjoy your homemade cheese pizza!
